Here’s another awesome “Eat to Live” inspired dish that I concocted during my first week in the 6 week plan. I’ve quickly learned tha tone of the most nutrient-dense vegetables on the planet does not have to be intimidating to cook with! And Trader Joe’s pre-chopped organic Tuscan Kale bags in the salad section save you time and last forever in the fridge!
SIMPLE SAUTEED KALE:
Ingredients:
- 2 cups chopped kale
- 3/4 cup vegetable stock
- 1/2 cup chopped Crimini mushrooms
- 2 cloves garlic, minced
- 1 teaspoon no-salt seasoning (like Frontier Salt-Free Organic All-Purpose Seasoning Blend)
Directions:
- In a pan cook kale with vegetable stock, garlic and seasoning on medium heat for 10 – 15 minutes or until well cooked. You may need to add water if your vegetable stock dissolves during the lengthy cooking.
- Add mushrooms and cook for another 3 – 5 minutes. Mushrooms should just be cooked through. Remove from heat and serve hot!
update….this was absolutely divine…my DH who abhors kale devoured this plate of food…just lovely…I fully recommend
